FIESTA EN JALISCO restaurants were established in 1994 by Alfonso Pimienta, Juan Mario Pimienta, Xavier Lepe and Sacarias Guitron, four cousins and good friends from their early childhood years. Their family roots are from AYUTLA, a small town in the Mexican state of Jalisco which is located south of Guadalajara and east of Puerto Vallarta.
Currently there are 7 restaurants FIESTA EN JALISCO which include: Orofino, Idaho; Ellensburg and Dayton, Washington; and 5 restaurants in the state of Montana which are located in Hamilton, Livingston, Polson, and 2 in Missoula. Each of these restaurants is looked after by a partner/manager that is a family member of one of the founding members.
